Here’s a recipe to make Taco Tuesday pretty easy. This recipe calls for a whole bird which would definitely be the way I would make it and would be the cheapest route. But I don’t have a bunch of hungry kids squawking about dinner. I would also leave the skin on, but I’m fat like that.
Using boneless and skinless chicken breasts or thighs would be even easier. I wouldn’t let the juices go to waste either. I’d thicken them up with some salsa and if it’s not thick enough add a burre manie which is just equal parts butter and flour kneaded together and then added to the juices and brought to a boil until thickened. A great topper for the tacos in addition to the ones listed below.
