For those of you who know me know I like to cook. And I like to eat even more. We haven’t had much in the way of food writing or recipe sharing in The Reporter for a while. If we do something food-related it’ll be elsewhere in the paper.

My sister, Kathy, became a good cook later in life but she didn’t start out that way. And she didn’t love cooking. She did it more out of obligation.

In our family she was often referred to as “Elly May” because of her lack of culinary skills. Not to belabor the point, but she once burned instant pudding. Mom had to throw the whole pot away with the spoon stuck in it. For those of you who don’t know your way around a kitchen: you don’t cook instant pudding.

It’s this time of year that I most enjoy cooking. When the weather starts to change I start thinking about big pots of slow-cooked goodness like soups and stews, anything tomato-y and cheesy, and crockpot recipes.

If you went to the Zombie Run and breakfast a few weeks ago you probably had Leah Thomason’s delicious Finnish pancakes. Leah’s recipe is from her great-grandmother, Olga Wellonen, who came to the U.S. from Finland in 1917.

Luckily for us, Leah has decided to share her recipe.

I wasn’t able to go to the run but mom and dad brought home some extra pancakes and sausage. They are delicious and very different than regular American pancakes. They are thinner. More like crepes than the pancakes we’re used to.

Even leftover and cold they were delicious. Thanks for sharing, Leah.

Finnish Pancakes

1/2 cup of butter, melted, and set aside

In a bowl whisk together:

1/2 tsp salt

2 tbsp sugar

2 eggs

Stir in:

1 1/2 cups buttermilk

Add:

1 cup flour

2 tsp baking powder

1 scant tsp baking soda

Mix well then add:

1/3 cup milk and melted butter

Melt additional butter on skillet.

Cook on medium heat until bubbly, then flip.

Best served with powdered sugar.
