Want to learn more about cooking? I will be giving cooking demonstrations at the Market Day at the Yards on June 22 at the Yards of Cameron. It starts at 10 a.m.
I will be doing peppers and tomatoes as the theme for my cooking demos (it’s the featured produce for the event).

APPEALING—Bananas have a lot of nutrient value and are great to eat to help with sore and cramped legs.
Here are some great tips on ripening bananas as well as a great recipe.
How to quickly ripen a banana for baking:
Step 1—Preheat oven to 300 degrees.
Step 2—Line baking sheet with parchment paper.
Step 3—Separate bananas and place on the baking sheet.
Step 4—Place bananas in the oven and let them bake for 30 to 40 minutes or until soft.
Step 5—Let bananas cool for 5-10 minutes before using
Note: Some bananas may leak and time will vary on size and amount of bananas.
Banana Chia Bread
Chia seeds are an excellent source of Omega 3s and fiber which gives the bread a nutritional boost.
Course: Breakfast, Dessert, Fruits, Kid Friendly, Snacks.
Servings: 12 slices.
Ingredients
1-1/2 cup white whole wheat fl our
2 tsp. baking powder
1/4 tsp. salt
One egg
2 tbsp. canola oil
1/2 cup sugar
1/3 cup chia seeds
2 bananas mashed
1/2 cup almond milk unsweetend
Instructions
Preheat oven to 400 degrees and grease a medium loaf pan and set aside. In a large bowl mix oil, egg, banana and sugar.
In a medium bowl add flour, salt, baking powder and mix until combined.
Slowly add flour mixture and milk to wet ingredients, alternating until incorporated.
Fold in chia seeds.
Place batter in loaf pan and place in the oven for 60 minutes or until a toothpick inserted in the middle comes out clean.
Calories: 150 (per slice).
