You will be happy to know that Richards Memorial Hospital Auxiliary members are compiling a Rockdale Community Cookbook and they want your recipes—or those of your Aunt Fanny or Grandma Jones.
They even want stories about these recipes that explain why this example is a favorite recipe of your family. Former Rockdale residents are also invited to submit favorites.
The book will be ready for 2011 Christmas giving and/or stocking stuffers which will certainly come in handy during that holiday season.

So, start looking through your recipe collection and send them in soon so you won’t be left out.
This one from Barbara Valek would be a good one for holiday time or it’s especially fitting for these hot, hot days—no baking! And you know it’s too hot to bake.
This is yummy and lighttasting, not too sweet and heavy, but just right.
Lemon Icebox Pie
9” graham cracker crust 2 (8 oz.) packages cream cheese, softened
1 (14 oz.) can sweetened condensed milk
4-5 tablespoons lemon juice
1 teaspoon lemon zest (or more if you like it really tart)
In a mixing bowl, beat cream cheese until fluffy. Add condensed milk, lemon juice and rind. Mix until smooth.
Pour mixture into crust and refrigerate at least two hours or overnight before serving.
Garnish with whipped cream or lemon slices or both.
