STPA = San Antonio, food, fun & friends

We just spent the weekend in San Antonio at the South Texas Press Association board meeting.

Bill and I stayed at the St. Anthony Hotel, great location, within walking distance to the Riverwalk, Alamo, etc. That’s where we will hold our 2012 STPA Convention in April.

Of course we ate some great food on the Riverwalk while we were there. Wonderful Mexican food at Casa del Rio and later at Paesano’s, some great Italian fare. Their signature Shrimp Paesano was to die for!

Probably the best things about going to any STPA outing are our STPA friends. I’ve been attending those conventions since I was a child, along with my brothers. (Yes, we had to bring them too.)

Port Aransas South Jetty friend Mary Judson gave me this great recipe while in San Antonio.

Right now fruit is so fresh and delicious, I try to make at least one meal per day either a veggie or fruit salad. I made this salad when we got back from San Antonio and highly recommend it.

Mary also says you can use this wonderful dressing on lots of things. Enjoy!

Strawberry, Apple and Mixed Green Salad

Dressing: 1 /4 c. plus 2 T. apple cider vinegar 1 T. honey 1 T. fresh lemon juice 1 /4 t. salt 2 T. extra virgin olive oil Combine everything except oil, then whisk it in until blended. Salad: Mixed greens with herbs or Romaine or whatever you want 2 c. sliced fresh strawberries 1 lg. granny Smith apply, cubed 1/4 c. toasted and slice almonds (optional) bleu cheese crumbles (optional
