shire sauce 1 teaspoon salt 1 teaspoon chi li powder Shredded cheese 1 baked pie shell

Brown meat in skillet; dra in. Ad d on ion, zu cc hini, ch iles , and bell pepp er; simmer unt il tender. Remove from heat; st ir in soup, tomatoes and sea soni ng s; spread in pie shell.

Top wit h desired amount of cheese and heat at 350 deg rees until mixture is hot throug h and cheese is melted. Ma kes 6 ser vings.

Mexica n Meatbal ls

The se sav or y meatba lls are always snapp ed up in a hur ry. They make a nice switch from more tr aditional meatball recipe s and are just as easy - if not easier - to ma ke.

If you do not have sta le cor n br ead or mu ffins, cr umb le fr e sh mu f fi ns or bre ad an d to a st at 25 0 de g rees for 15 minutes to dry out the crumbs slightly.

2 cups day old corn muffi n or bread crumbs 1 1/ 2 pounds ground turke y
or be ef 20 ou nc es mild or med ium enc hilada sauce, divided Salt Pepper 4 ounces shre dded Me xic an
che ese mixture

Prehe at the ov en to 350 degrees. Mix toget her the cornbre ad, ground tu rkey or beef , 1/2 cup sauce, and salt and pepper to taste in a large bowl.

For m the mix ture into cocktail sized meatball and place on a large jelly roll pan or baking pan. Bake for 20 minutes, or until brow ned and co ok ed through, shaking the pan a few times to allow the meatba lls to brown evenly.

Wh ile themeatba lls are heat ing, he at th e re main ing sauce unt il piping hot. Plac e the meatballs in a chafing dish, crockpot,orsaucep anover low heat.

Ad d th e sauc e and toss to coat. Sprinkle the che es e on top and serve with plent y of toothpicks and napkins.
