Now, don’t forget the cornbread

Here are five things it is reccomended you eat on New Year’s Day:

1. Black-eyed peas or other legumes bring prosperity. The shape and abundance of legumes are reminiscent of coins. special coins because they swell when cooked. Thus, black-eyed peas (or other legumes) are symbolic of increasing wealth. Enjoying them on New Year’s Day signifies financial growth in the upcoming year.

2, Collard greens represent folded money and, therefore, symbolize good fortune and economic rewards. Eating collards or any cooked green, leafy vegetable on New Year’s Day will ensure continued personal good fortune in the New Year.

3. Pigs signify luck and forward progress because they always root in a forward motion. Moreover, pork signifies wealth and prosperity because of the meat’s rich fat content. Consuming ham or other pork foods on New Year’s Day invites an abundant New Year.

4. A good cake of Southern cornbread is a golden color and represents gold (or money). It’s easy to double up on your ‘economic intake’ by making a batch of cornbread to eat with a fortunate New Year’s meal of legumes, greens and ham.

5. Eat the beans, green and pork individually or combine these delicious ingredients in a single dish. And don’t forget the cornbread!

Golden Corn Bread
1 c. sifted all-purpose flour
1/4 c. sugar
4 tsp. baking powder
3/4 tsp. salt
1 c. yellow cornmeal
2 eggs
1 c. milk
1/4 c. soft shortening

• Sift together into bowl flour, sugar, baking powder and salt. Stir in cornmeal.

• In a small bowl beat eggs with fork; add milk and shortening. Add all at one time to cornmeal mixture. Stir with a fork until flour is just moistened. Even if batter is lumpy, do not stir any more.

• Pour into well-greased 9X9X2 pan. Bake in hot oven (425 degrees) 30 to 25 minutes, or until done. Cut in squares and serve hot with butter.

Makes 9 servings.
