2 cups fresh basil

2 cloves garlic (chopped)

1/4 cup chopped walnuts

1/2 cup olive oil

1/4 tsp kosher salt

1/4 tsp black pepper

1/4 cup Parmesan cheese

Place the basil and garlic in a blender or food processor. Add the walnuts. Add the salt, pepper and olive oil. Blend well, then stir in the cheese by hand.

This next one is called Salsa Verde but it’s not the Mexican one you are used to. It’s delicious on any roasted vegetable, but especially potatoes.
