Former Rockdalians Karen and Terry Stuller were in town briefly last week and Mom and Dad hosted a brunch for them. The food was good, and I had a request for the recipes made that day. The brunch lasted from 10 a.m. to 5 p.m. Even in my younger brunching days I don’t think I ever went to one that lasted that long.
For those readers who remember the Stullers, they look exactly the same as you remember them. So cute!
Here is the main course.
Eggs Florentine Casserole
1 package of bacon, cooked crisp, drained well and chopped 8 oz. grated cheddar cheese 1 package fresh baby spinach 1 dozen eggs 1 pint whipping cream Fresh mushrooms, sliced Salt and pepper Red pepper flakes Can be prepared the night before cooking and serving. Spray a 9x13 baking dish with cooking spray. Layer cooked bacon in bottom of pan. Sprinkle half of cheese over meat. Spread fresh spinach over this. Break eggs into a bowl and stir with a fork.. Add remaining cheese. Break eggs into a bowl and stir with a fork. Mix cream and eggs together before pouring over all. Place sliced mushrooms in a layer on top. Bake uncovered at 350 for 45 minutes or until firm. Can substitute brown and serve sausages for the bacon.

Cheddar Bay Sausage Balls
1 package Red Lobster Cheddar Bay Biscuit mix 1 (8-oz) package cream cheese softened 1-1/4 cups shredded cheddar cheese 1 lb. sausage, uncooked Preheat oven to 400. In the bowl of an electric stand mixer fitted with a dough hook, combine biscuit mix and seasoning packet, sausage, cream cheese, and cheddar cheese. Mix until everything is incorporated into the sausage.
Shape into 1-inch balls. Place on a parchment-lined baking sheet. (Can freeze at this point) Bake for 15-20 minutes, until golden brown.
—kwc— Last but not least, here is Annette Griesbach’s coffee cake recipe which I shouldn’t have tried but couldn’t resist. It was totally worth it. Annette says this freezes well.
New York Style Crumb Cake Bottom layer:
1 box yellow cake mix 2 eggs 2 tsp vanilla 1-1/3 cups water Grease and flour a jelly roll pan or oblong cookie sheet. Bake for 17-20 min at 350. Take out of oven and rest for 10 min.
Top layer:
4 sticks butter, cut up as if making pastry 4 cups flour 1 cup sugar 1/2 cup brown sugar 2 tbsp cinnamon 1-1/2 tbsp vanilla a pinch of salt Mix top mixture and crumble all together in large bowl. Crumble all ingredients and spread over the partly cooked cake. Return to oven and bake 18-20 min at 350.
When cool, sprinkle (using a strainer) with confectioners sugar.
