Let's talk about some football snacks this week. Evidently this first recipe is going viral on TikTok but that isn't where I saw it. This is going to come out much better if you grate your own cheese instead of using pre-grated.
Jalapeño Cheese Squares
16 oz sharp cheddar cheese shredded 16 oz Monterey Jack cheese shredded 1/2 cup crumbled bacon 1/2 cup pickled jalapeños diced 1/2 cup all-purpose flour 15 oz evaporated milk 2 eggs Combine the cheeses, bacon, and jalapeños in a large mixing bowl.
Whisk together the evaporated milk, flour, and eggs until smooth in a separate bowl.
Pour the wet ingredients onto the cheese mixture and stir until well incorporated.
Pour the mixture into a 9×13 baking dish.
Bake at 350 for 35-40 minutes or until the top is golden brown and bubbly.
Let cool for 10 minutes, slice into squares, and serve immediately. —kwc— For t his one it w ould b e helpful to put both the cheddar and cream cheeses in the freezer before cutting. The last step of the directions say to take it out of the dish and put it on a serving platter. I would not bother doing that.
Marinated Cheese
1/2 cup olive oil 1/2 cup white wine vinegar 1 (2 oz) bottle diced pimento, drained 3 tbsp chopped fresh parsley 3 tbsp minced green onions 3 cloves garlic, minced 1 tsp sugar 3/4 tsp dried basil 1/2 tsp salt 1/2 teaspoon ground black pepper 1 (8 oz) block cheddar cheese 1 (8 oz) package cream cheese, cold Combine oil, vinegar, pimento, parsley, green onions, garlic, sugar, basil, salt, and pepper in a jar with a tight-fitting lid. Seal the jar and shake vigorously to blend.
Cut cheddar block in half lengthwise, then cut crosswise into 1/4-inch slices to form squares. Repeat with cream cheese.
Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. (You can arrange in a single row or in two parallel rows, depending on the size of your dish.) Pour marinade from the jar over top, cover, and refrigerate for at least 6 hours, or overnight.
To serve, transfer slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over top. —kwc— We have my sister-inlaw's queso at a lot of family gatherings because we all love it. Here is one with meat in it that is also good.
Beefy Queso Dip
1 pound lean ground beef 1 packet (1 oz) taco seasoning 1/3 cup water 16 ounces Velveeta cheese cubed 1 cup salsa any variety Brown the ground beef in a medium skillet. Drain any fat.
Stir in taco seasoning and 1/3 cup of water. Let simmer until the water has evaporated.
Add the processed cheese and salsa, stirring over medium heat until melted.
Serve with tortilla chips for dipping.
