During this time of unprecedented events and circumstances, there are not many happenings for me to write about in this column space, so I am going to change it up a bit.

My family and I are trying to not let our washed hands get too idle and have done a lot of baking in our self-quarantine time. With that I was also de-cluttering my recipe collection. I got rid of a lot and “found” some items I forgot were even there, including one of my mother Kay’s recipe boxes.

Dementia has taken her mind over the years, but before that she enjoyed sharing her love of cooking, especially baking. This is something she passed along to me, and I now on to my two junior-high-aged kids we call the “Bakken Brainiacs.”

So as a way to try and spread some of my mom’s love and brightness in this time of uncharted circumstances, I am going to share a recipe of some of “Mama Kay’s” most tasty treats and maybe even some of the Brainiacs’ favorites.

This first recipe my mother called “Icebox Pie.” The fruit topping can be changed up depending on what flavor pie filling you want to use. I have a couple of family members that just like the creamy filling in a pie crust with no fruit filling on top, and that works too.

The colder this gets, the more it sets and the better it tastes. My mom’s preference was cherry pie filling, but I like blueberries. Another addition is to layer sliced fresh bananas on the graham cracker crust before adding the cream filling and fruit topping (I like blueberry topping when using bananas in the crust).

Remember to do your part to stay home, stay safe, stay well and stay kind. The more we adhere to the precautions, the sooner these strange times will be a thing of the past.
