We’ve got another few days before the Super Bowl so here are some more game day recipes. I bought Everything Bagel seasoning at Costco and now I am never without it. I love it on almost anything. If you are a garlic lover, you need to try it. Here’s a dip using it.
Everything Bagel Dip 1 (8-ounce) package cream cheese, at room temperature 1 (16-ounce) container sour cream 1 lemon, juiced and zested 1/3 cup everything bagel seasoning, plus more for garnish 2 (3.5-ounce) containers capers, drained and rinsed 3 scallions, roots removed, thinly sliced, white and green parts separated Kosher salt and freshly ground black pepper Extra-virgin olive oil, for garnish Bagel chips, Persian cucumbers and cherry tomatoes, for serving In a medium bowl, whisk together cream cheese, sour cream, and the juice and zest of 1 lemon. Add everything bagel seasoning, capers and white parts of scallions, reserving the green parts for garnish. Whisk to combine. Add salt and pepper to taste.
Transfer to a serving bowl and top with green scallions, a drizzle of olive oil and additional everything bagel seasoning.
Serve with bagel chips, cherry tomatoes, and cucumbers.
—kwc— This hearty dip has the works: pepperoni, onions and bell peppers stirred into a thick tomato sauce, all topped with gooey melted cheese. Serve in a skillet and let your guests pile their baguette slices high with toppings, deep-dish style.
Supreme Pizza Dip
4 ounces pepperoni 1 cup finely-chopped onion 1/2 cup finely-chopped green bell pepper 2 cloves garlic, minced plus 1 whole clove 1/2 tsp dried oregano Kosher salt and freshly- ground black pepper 1 tbsp tomato paste 1 28-ounce can crushed tomatoes 1/3 cup pitted black olives, chopped 1/4 cup grated Parmesan 1 baguette, ends trimmed, sliced diagonally into twenty- four 1/2-inch pieces 2 tbsp olive oil 4 oz mozzarella, diced Preheat the oven to 425. Dice 3 ounces of the pepperoni. Thinly slice the remaining 1 ounce and set it aside to garnish the dip.
Heat a medium cast-iron or oven-proof skillet over medium heat until hot. Add the diced pepperoni and cook, stirring, until crisp, 4 to 5 minutes. Add the onions, bell pepper, minced garlic, oregano, 3/4 teaspoon salt and some pepper. Continue to cook, stirring, until the onions are very tender and lightly browned, about 5 minutes.
Stir in the tomato paste and cook, stirring, until it coats the vegetables and smells lightly toasted, about 1 minute. Stir in the tomatoes with their juice from the can. Reduce the heat and simmer, stirring occasionally, until the mixture is slightly thickened, about 15 minutes. Stir in the olives and Parmesan and remove from the heat. Season with additional salt and pepper.
Meanwhile, toss the baguette slices with the oil and spread in a single layer on an ungreased baking sheet. Bake until lightly toasted and crisp, 7 to 9 minutes. Rub the slices with the whole garlic clove and set aside to cool.
Preheat the broiler. Scatter the mozzarella and reserved sliced pepperoni over the dip in the skillet. Place the skillet under the broiler and broil until the cheese is melted and lightly browned, 2 to 3 minutes. Serve the dip warm with the garlic toasts on the side. —kwc— This one is always popular and easy to make with some store-bought ingredients.
Seven Layer Dip
14 ounce can refried beans 8 ounce package cream cheese 1/2 cup sour cream 1 tbsp taco seasoning 2 cups guacamole 2 cups salsa, drained 1-1/2 cups cheddar cheese, shredded 1/4 cup black olives, sliced 1/4 cup tomatoes, diced 2 tbsp green onions, sliced In an 8-inch square casserole pan or 2.5 quart casserole dish, spread the refried beans in a single layer on the bottom.
In a medium mixing bowl, combine cream cheese, sour cream, and taco seasoning and stir to combine. Gently spread mixture over the refried beans in an even layer.
Add a layer of guacamole. Use a fine mesh sieve to drain the salsa to remove any excess water. Then, spread the drained salsa over the guacamole.
Top with shredded cheese. Sprinkle black olives, tomatoes, and green onions on top.
Serve immediately with tortilla chips or crackers, or store in the refrigerator until ready to serve.
