Anyway, I love rice and I’ve been missing it because Mom and Dad don’t love it like I do.

I made fried rice the other day and it was delicious. Fried rice is always made with leftover rice from the day before. And I like the idea that I can make rice one day and then cook it the following day. Not that there is any work involved with a rice cooker which you just turn on and leave.

If you joined in the Instant Pot craze, making rice in it is super easy. I had one but I found the only thing I was using it for was rice so I gave it away.

Anyway, I was looking for a rice recipe with fresh ingredients added after the rice was cooked and I found the perfect one on Closet Cooking.

Bring rice and water to a boil, reduce heat to simmer, cover and cook 17-20 minutes until rice is done and water is absorbed. Or use your new rice cooker. In a large skillet sautee onion and garlic until tender. Add the rice, avocado, cilantro, lime juice and zest to the skillet and toss to coat.
