There is a guy named Jim I’ve been following online who is Italian and makes very good Italian food on his website called Sip and Feast. I like Italian food but I don’t love it like a lot of people do.

He has lots of different kinds of Italian recipes. It’s not all spaghetti and meat sauce and this side dish is definitely something different. If you love Italian food you should check him out. He’s very likable and often cooks with his kids.

Baked Artichoke Hearts with Seasoned Bread Crumbs

For the artichoke hearts

1/4 cup olive oil 3 14-ounce cans arti

3 14-ounce cans artichoke hearts rinsed and drained

3 cloves garlic minced

1/4 teaspoon crushed red pepper flakes

For seasoned breadcrumbs

1/2 cup plain breadcrumbs

1/2 cup Parmigiano Reggiano grated

1/4 cup parsley minced

1 tbsp fresh lemon juice

1/2 tsp kosher salt 1/4 cup dry white wine

1/4 cup dry white wine like pinot grigio or sauvignon blanc

Preheat oven to 375 and set to middle rack. Mix seasoned breadcrumbs ingredients together and set aside.

Mix the minced garlic and olive oil together in a bowl. Spoon half of the garlic oil into a large baking dish and spread it around to evenly distribute.

Next, place the artichoke hearts into the baking dish and top them with the remaining garlic oil. Sprinkle the hot red pepper all over the hearts.

Evenly sprinkle the seasoned breadcrumbs and bake for 15-20 minutes or until hot all the way through and the breadcrumbs have browned. For more color, the artichoke hearts can be broiled for the last 45-60 seconds but watch carefully.

Since we’ve already got a side dish theme going on, here is another one. I normally make these in a large skillet on the stove, but this one sounds easier.

Baked radishes sound strange, but I promise they are delicious. The bite raw radishes have is no longer present in the baked ones. Plus if you’re doing a low carb diet these are amazingly similar to red potatoes.

Roasted Radishes

2 lbs. radishes

1.5 tbsp olive oil

1/2 tsp salt

1/4 tsp freshly cracked black pepper 1/4 tsp garlic powder

1/4 tsp garlic powder

1 Tbsp chopped parsley

Preheat the oven to 400. Trim the stems or any extra-long roots from the radishes. Rinse the radishes well in a colander. Slice the radishes in half and place them on a large baking sheet.

Drizzle the olive oil over the radishes, then add the salt, pepper and garlic powder. Toss the radishes until they’re coated in oil and seasoning. Transfer the seasoned

Transfer the seasoned radishes to the oven and roast for about 40 minutes or until they're golden brown and tender, stirring once halfway through. Total roasting time will depend on the size of your radishes.

Taste the radishes and adjust the salt or other seasonings to your liking. Top with fresh chopped parsley for garnish, if desired.
