I was thinking about Mr. Joe Hairston’s cantaloupes the other day and I just happened to run across this recipe. This combination of flavors sounds very good to me. The recipe does have a couple of not-available-in-Rockdale ingredients, but with a couple of changes we can fix all that. I’m printing the recipe as is, but here’s what I would do.

Leave out the cardamom unless you already have it because there’s only an 1/8 of a teaspoon anyway. I’m not sure sumac is available on the spice aisles here but Tajin is and it’s delicious on everything. So I’d substitute the sumac for Tajin, which is just sprinkled over everything once you’re ready to serve. I don’t think I’ve ever seen Fresno chilis here so just substitute jalapenos. Or just leave them out if you don’t like spicy.
