Sometimes you just need something easy and quick for dinner, especially if you have kids who are involved in sports or anything else. You can have these cheater enchiladas on the table in 30 minutes.

Cheater Enchiladas 1 box frozen taquitos, beef and cheese or chicken and cheese 1 cup or more Mexican blend cheese 1 can red or green enchilada sauce Preheat oven to 375. Line a 9x13 pan with taquitos. Pour the enchilada sauce over the taquitos then top with a cup or more of cheese. Bake for 20 to 25 minutes until cheese is melted.

Ser ve with r ice and beans or grocery store guacamole with lettuce and tomatoes just like at a Mexican restaurant. —kwc— I love Thai food and this slaw sounds very good to me. And just like the enchiladas above, it's definitely not authentic but all the Thai flavors are there. I have never seen coconut sugar, but light brown sugar is fine. This would go especially nicely with whatever you have on the grill this summer.

Thai-style Slaw 2 cups shredded green cabbage 2 cups shredded red cabbage 1 large carrot, shredded 1 small serrano chile, thinly sliced 1/2 cup chopped roasted salted cashews 1/4 cup chopped fresh cilantro 2 tbsp chopped fresh basil 1 clove garlic, grated 2 tbsp creamy peanut butter 2 tbsp fresh lime juice 4 tsp coconut sugar or light brown sugar 2 tsp soy sauce 1 tsp finely grated peeled ginger 3/4 tsp fish sauce 1/2 tsp toasted sesame oil In a large bowl, toss cabbages, carrot, chiles, cashews, cilantro, and basil.

In a medium bowl, whisk garlic, peanut butter, lime juice, sugar, soy sauce, ginger, fish sauce, and oil.

Pour dressing over slaw and toss to combine.

—kwc— Since we're being inauthentic here's a Greek-style chicken salad.

Tzatziki Chicken Salad 1 medium cucumber, finely grated 3/4 cup plain Greek yogurt 2 tablespoons chopped fresh dill 1 tablespoon lemon juice 1 clove garlic, minced 1/2 teaspoon salt 1/4 teaspoon pepper 1 cooked rotisserie chicken 1/2 red onion, diced Wrap grated cucumber in a paper towel (or a tea towel) and gently squeeze to remove excess moisture. Add grated cucumber to a bowl along with Greek yogurt, dill, lemon juice, garlic, salt, and pepper. Stir to combine. Shred rotisserie chicken into small, bite-size pieces and add to your prepared sauce along with red onions. Toss until evenly coated.

Serve on pita bread with fresh sliced tomato and red onion, on crackers, with pita chips or over a bed of lettuce.
