Do you tend to buy a lot of canned pumpkin during the holidays?
Do you have a lot of cans left over that you did not use in your pantry?
Well, I’ve got a great recipe for you to use that also allows you use up some pumpkin while enjoying a healthier cookie for the holidays.
It is also a great one for kids. Try to even let them help you in the kitchen with this recipe.
Chewy Pumpkin Cookies
Makes 24 cookies
Ingredients
1/2 cup brown sugar
1/2 cup sugar
1-1/2 cups pumpkin puree
1/2 teaspoon vanilla extract
1-1/2 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups flour
1/2 cup cinnamon baking chips
Instructions
• Preheat oven to 350F.
• Clean all utensils and surfaces.
• Spray two baking sheets with non-stick baking stray; set aside.
• In a medium size bowl, mix together sugars, pumpkin puree, and vanilla extract until smooth.
• Add in spices, baking powder, and baking soda.
• Slowly add in flour to mixture and continue to mix on low speed. Do not over-mix flour.
• Fold in cinnamon baking chips.
• Scoop dough on baking sheet and bake for 12-14 minutes. Cookies will not be chewy if left in oven for a longer time.
Serving Size: 1 cookie.

ALTERNATE— Gabriel Ramthun, Milam County 4-H member, is an alternate to the State 4-H Food Show in June. He participated in the District Food Show last week in Belton and Gabriel won second place with his nutritious snack of tzatziki sauce.
