Avery nice lady named JoAnn Davidson from Milano called me to thank me for the low carb “tortilla-less” soup I had in last week. Seems lots of folks are doing the low carb thing these days.

This recipe is also low carb but you don’t have to be on a low carb diet to enjoy it. It won’t be low carb if you serve it over rice or potatoes, but some people on a low carb diet make riced cauliflower to enjoy recipes like this. They even sell it in the frozen food aisle.

To make this recipe even easier you can buy chicken breasts that area already sold as cutlets and you can use your favorite Cajun seasoning instead of making your own, but you probably have all these ingredients in your pantry. Cut the chicken into bite sized pieces to make it easier for little kids.

Cajun Chicken in Creamy Sauce For the chicken

2 large chicken breasts, about 24 ounces 2 tablespoons flour 2 tablespoons butter 2 tablespoons olive oil For the Cajun seasoning 2 tsp each smoked paprika, garlic powder, onion powder 1 tsp salt 1 tsp each dried oregano, dried thyme 1/2 tsp pepper 1/4-1/2 tsp cayenne For the cream sauce 1/2 medium red onion, chopped 1 pint cherry tomatoes, halved 2 bell peppers (any color combo), chopped into 1” pieces 4 garlic cloves, minced 1 1/2 cups low sodium chicken broth 1 tablespoon cornstarch 1 cup heavy cream 1 tablespoon lime juice 1/2 cup freshly-grated Parmesan cheese Mix together all of the Cajun seasonings in a shallow dish large enough to dredge the chicken. Remove 1 tablespoon seasonings to be used later in the sauce. Whisk 2 tablespoons flour into the seasonings in the dish.

Slice the chicken breasts in the half through the equator to create 4 fillets. Cover with plastic wrap and pound to an even thickness. Pat dry.

Dredge each breast in the Cajun flour mixture, shake off any excess, then transfer to a dry surface.

Melt the 2 tablespoons butter in 2 tablespoons oil in a large skillet over medium- high heat. Once hot, add chicken and cook for 4-5 minutes per side (depending on thickness) until golden and cooked through. Transfer chicken to a plate, don’t wipe out skillet.

To the oil left in the skillet (don’t wipe out), add enough oil to equal 1 tablespoon if needed. Heat over medium-high heat. Once hot, add onions, and cook 3 minutes; then add tomatoes, bell peppers, garlic and reserved spice mix and cook 2 minutes.

Add half of the chicken broth to the pan and whisk the remaining chicken broth with cornstarch until smooth. Add to pan along with heavy cream. Bring the sauce to a simmer and simmer until thickened, stirring occasionally.

Reduce heat to low and stir in Parmesan cheese until melted followed by lime juice. Add chicken back to the skillet and cook a minute or so to heat through. Taste and season with additional salt, pepper and/or cayenne pepper to taste. Garnish with freshly-chopped parsley and lime juice. —kwc— What am I going to make to go with pork chops? How about Southern Fried Cabbage, which also happens to be low carb if you leave the sugar out of it.

Best Southern Fried Cabbage Cabbage Thick cut bacon (5-6 slices) 1 onion 1 tsp chicken bouillon 1 tsp white sugar 1-2 tablespoons apple cider vinegar Smoked paprika 1/2 packet Sazon Salt, pepper, garlic, onion powder Cayenne pepper Worcestershire Sauce 1 tbsp butter 1 tablespoon garlic paste Begin by removing the core of the cabbage and slicing it into your desired thickness. Dice your onion and chop the bacon as well.

Over medium heat, fry the bacon until crispy and remove with a slotted spoon. To the same pan, add your onions and cook for 3-4 minutes or until they start to get tender. Next, add your garlic and cook for 1-2 minutes. Add your cabbage and mix to combine. Season to taste with listed seasonings and add in your Worcestershire, sugar and vinegar. Add butter and cover the pan with a lid and cook for 10 minutes on low.

Cook, covered, checking occasionally, until cabbage is tender. Taste as you go and adjust the seasoning as needed. Add your bacon once the cabbage is tender and mix to combine. You can add sausage to this as well.
