I’ve been seeing a lot of freshly harvested yellow squash in the grocery store lately. Here’s a good casserole that doesn’t have any cream of whatever soup in it. It’s still not healthy but it does use real ingredients.
Grandma’s Squash Casserole
4 cups sliced yellow squash 1/2 cup chopped onion 1/4 cup water, or more as needed 35 Ritz Crackers, crushed 1 cup shredded cheddar cheese 2 large eggs, beaten 3/4 cup milk 1/4 cup butter, melted 1 teaspoon salt Ground black pepper to taste 2 tablespoons butter Preheat the oven to 400. Place squash and onion in a large skillet over medium heat; pour in water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
Mix cracker crumbs and cheese together in a medium bowl. Stir half of the cracker mixture into the cooked squash and onions.
Mix eggs and milk together in a small bowl, then add to squash mixture.
Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into the prepared baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
Bake in the preheated oven until lightly browned, about 25 minutes. -kwc I like cabbage but we don’t eat it very of ten. Next time you light up the grill you should make this. Doesn’t get much easier.
Grilled Cabbage
1 medium head cabbage (about 1-1/2 pounds) 1/3 cup butter, softened 1/4 cup chopped onion 1/2 teaspoon garlic salt 1/4 teaspoon pepper Optional: Minced fresh parsley and salad dressing of choice Cut cabbage into 8 wedges; place on a double thickness of heavy-dut y foil (about 24x12 in.). Spread cut sides of cabbage with butter. Sprinkle with onion, garlic salt and pepper.
Fold foil around cabbage and seal tightly. Grill, covered, over medium heat until tender, about 20 minutes. Open foil carefully to allow steam to escape. If desired, garnish with parsley and dressing. -kwc And here’s a dish to eat with both these sides. I stole this from Karen Whitmire Matous and it sounds delicious and easy.
Parmesan Baked Pork Chops
4 boneless pork chops, 1/2” thick 1 tbsp olive oil 1 cup Parmesan cheese 1 cup Italian breadcrumbs 1 tsp black pepper 1 tsp garlic powder On a plate combine the last 4 ingredients.
Rub the pork chops with olive oil and then dip (coat) each one in the cheese mixture. Press the mixture over the pork chops to make sure they are well covered in it.
Line a pan with tin foil and spray with cooking spray.
Place the pork chops on the pan and bake at 350 degrees for 40-45 minutes.
