LEXINGTON—Funeral services for Sue Cook, 69, of Lexington were held on Saturday, Feb. 27, 2021, at First Baptist Church in Lexington with Bro. Casey Goetz and Bro. David Atwood officiating. Burial followed in the Adina Cemetery.

Sue Cook was born on Nov. 26, 1951, in Cameron to William “Bill” Everett Simpson and Ester (Hobbs) Simpson.

She graduated from Lexington High School.

Sue became a member of Tanglewood Baptist Church in 1969 and it is there that she married Kenneth Cook on April 20, 1985. She was a caregiver her

She was a caregiver her whole life, whether she was taking care of her family or working as a dialysis nurse for Austin Diagnostic Clinic in Giddings.

Her grandchildren were her world. She enjoyed watching them play sports, going on vacations, and spending as much time with them as she could. They loved singing silly songs together.

Her favorite places to vacation were the beach, New England states during the fall to watch the leaves change, and Australia. The time she spent on the mountain slopes were usually in the lodge drinking coffee that she loved so much.

Family reunions were important and she made sure her family was represented at the gatherings.

Yellow was her favorite color and she enjoyed sunflowers and yellow roses. She enjoyed working in her yard and tending to her flowers. Sue loved shopping and would always buy more than she needed just to get the “deal.”

She loved the Lord and her church family at Tanglewood Baptist. Over the years, she taught Sunday school, was on the Kitchen Committee, spent countless hours cleaning, and for the past two years was a huge supporter of the new building project.

Sue passed away the afternoon of Tuesday, Feb. 23, in Austin with her family by her side.

She was preceded in death by her parents, William “Bill” and Ester Simpson; her husband, Kenneth Cook; a son, Nathan Biehle; a grandson, Hunter Biehle; a brother and sister-in-law, Harold and Nena Simpson; and father-in-law, Harlan Cook.

Sue is survived by her children, Russell and Tina Biehle of Lexington, Paul and Jennifer Biehle of Lexington, Carly Cook of Lexington, Jesse and April Cook of LaPorte, Melissa and Jason Forgey of Pasadena; 11 grandchildren, Allyson Biehle, Maci Biehle, Mason Biehle, Will Cook, Tristen Forgey, Micah Forgey, Jacee and Chase Davis, Alivia Forgey, Darian Cook, Aleya Cook and Nolan Cook; a great-grandson, Jensen Davis; a brother, Roy and Diane Simpson of Lexington; her mother-in-law, Lita Cook of Tyler; and many nieces, nephews, cousins and special friends.

Serving as pallbearers were Mark Strain, Troy Simpson, John Woods, Dennis Cisneros, JR Clark and Kenneth Hall.
