Memorial Day tributes

American Legion Post 358 Commander Jim McKimmey led a Memorial Day tribute at Veteran’s Park on May 31 in front of an appreciative crowd of less than 50 people. McKimmey talked of his days in Vietnam where he was a soldier during the ‘60s.

Class of ’21 benefits from endorsement program

In 2014, with the passage of House Bill 5, lawmakers and school districts worked together to provide students in Texas with a variety of choices in the courses they could take to help prepare for college and careers.

Performances noted

On May 7, members of the Rockdale Junior High School Symphonic and Beginning bands participated in the Rockdale ISD Solo and Ensemble Contest. Students received superior and excellent ratings from the judges.

Retirement honor

Alcoa Retirees meet June 10, Thorndale Rockdale Alcoa Retirees will hold a meeting on Thursday, June 10, at the Thorndale Veteran’s Memorial Hall, formerly known as the VFW Hall. “Doors open at 5 p.m. and a long, boring meeting will begin at 5:45 p.m.,” according to Doug Williams, president.

Monday—Memorial Day holiday. Tuesday—Hamburger steak, new potatoes, Brussels sprouts, fig cookies, wheat bread, milk. Wednesday—Chicken fajitas, oriental vegetables, egg rolls, fortune cookies, milk. Thursday—Pulled pork, corn, seasoned fries, wheat bread, peach cobbler, milk.

Coronation Chicken two ways

It kind of seems odd now, but the recipe for Coronation Chicken was made just for Queen Elizabeth’s coronation in 1953. It’s basically a curried chicken salad but you’d have thought something fancier would have been on the menu.
